Ingredients

  • 1 1/2 cups cashews, or peanuts or a mix, raw or roasted
  • 1/3 cup almond (or any other nut) butter
  • 1 cup white chocolate chips
  • 1 scoop protein powder vanilla or unflavoured

Instructions

  • Line a baking sheet or tray with parchment paper or use a silicon tray.
Place chocolate chips and almond butter in a medium-sized bowl and microwave with 30 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and almond butter together.
Once melted  add chopped cashews, peanuts and protein powder to the bowl and mix all together until well combined, and the nuts are thoroughly coated in the almond butter chocolate sauce.
Scoop out about 1 tablespoon-size clusters at a time onto the baking sheet
Makes around 8-10 clusters, depending on your preferred size and allow to set in fridge.
Store leftovers in the refrigerator for up to about 7 days. So you can enjoy a cluster every single day during the week!
Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
