White Chocolate Fruit & Nut Bark

White chocolate bark is the unexpected dessert you will love making and eating! And these bright, delicious dried fruits (always in season!) will brighten up anyone’s days!

Ingredients

  • 1 1/2 cups white chocolate chips or chopped bar
  • 1 1/2 tablespoons coconut oil
  • 1 cup nuts, almonds, walnuts, cashews, pistachios or a mix roughly chopped   
  • 1/2 cup dried cranberries 
  • 1/2 cup dried apricots

Instructions

  • Line a baking sheet with parchment paper.
    Place chocolate chips and coconut oil in medium dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the melted white chocolate onto the prepared sheet and use a spatula to spread it into a square or oblong shape about ½ inch thick in an even layer. 
    Sprinkle the nuts and dried fruit evenly over the chocolate, gently pressing them in so they stick. 
    Refrigerate the tray for at least 30 minutes, or until the chocolate is firm. Once set, break the bark or cut into 10-12 pieces or more smaller squares.
    Store in fridge for up to 1 week or freezer for up to 3 months.
