Ingredients

  • 1 cup cashews, or peanuts or a mix, raw or roasted,
  • 1/2 cup dried fruit, cranberries ,pineapple, apricots etc
  • 1/2 cup cashew, almond (or any nut) butter
  • 1 scoop vanilla protein powder
  • 1 cup white chocolate chips

Topping

  • Sprinkles – These can be whatever you want them to be. Base it on what’s in your cupboard or what occasion you are celebrating. It’s up to you!

Instructions

  • Line a baking sheet or tray with parchment paper or use a silicon baking tray.
Place chocolate chips and cashew butter in a medium-sized bowl and microwave with 30 second bursts stirring between each one until melted and smooth.
Or use double boiler method- (pot of boiling water with a bowl resting on top) melt the chocolate chips and cashew butter together.
Once melted add chopped nuts, fruit and protein powder to the bowl and mix all together until well combined and thoroughly coated in the cashew butter chocolate sauce.
Scoop out about 1 tablespoon-size cluster at a time onto the baking sheet. Top with your choice of sprinkles or any other topping like chopped nuts or fruit.
Makes around 8-10 clusters, depending on your preferred size and allow to set in fridge. Once cool, store in an airtight container.
Store leftovers in the refrigerator for up to about 7 days. So you can enjoy a cluster every single day during the week!
Then if you want to keep them for longer, you can store them in an airtight container in the freezer for about 3 months. And when you want to eat one, you can either eat it frozen or let it thaw for a little bit in the fridge to soften up.
