Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once the white chocolate is fully melted and smooth, stir in the dried cranberries and chopped pecans.Make sure the ingredients are evenly coated with the melted chocolate for the best flavor distribution.Stir in the vanilla extract for added flavor. If you love a sweet-salty combo, sprinkle in the optional sea salt at this stage. This little touch will elevate the overall taste of the clusters, making each bite even more delicious.Use a spoon to drop small spoonfuls (around 16-18) of the mixture onto the sheet, forming clusters. You can adjust the size depending on your preference—whether you like small, bite-sized clusters or slightly larger ones for a more indulgent treat.Place the baking sheet in the fridge for about 20 minutes or until the clusters are fully set.
