Ingredients
2cupswhite chocolate chips
2tablespoonscoconut oil
1/2cupdried cranberries, divided in half
1/2cupany nuts, chopped, divided in half
1/4cupprotein or collagen peptides powder
2tablespoonsgrated orange zest
1teaspoonvanilla extract
1/4teaspoongrated nutmeg
Additional orange zest - optional
Instructions
Line a baking tray with parchment paper and set aside.In a medium sauce pan over a very low heat, melt chocolate and coconut oil. Stir frequently until melted and smooth. Add 1/2 measure of cranberries and nuts, protein powder, orange zest, vanilla extract and nutmeg and stir until well combined in the chocolate sauce.Immediately spread white chocolate mixture out to 1/2-inch thickness on parchment paper. Immediately sprinkle remaining cranberries and nuts on top, pressing to adhere. Sprinkle with additional orange zest if desired.Refrigerate bark 1 hour until completely firm. Remove from fridge and break into bite-sized pieces. Store in an air-tight container at room temperature until ready to serve. Store in fridge for up to1 week or freezer for up to 3 months.
