Ingredients
2cupswhite chocolate chips
1cupnuts of choice, toasted, salted, chopped
1/2cupdried apricots, chopped
1/2cupdried cranberries or goji berries (for a pop of colour)
Instructions
Line a 10 x 15-inch rimmed baking pan or sheet with parchment paper. Oruse a silicon baking mat.Place chocolate chips in a medium sized dish and microwave at 50% power with 30-40 second bursts stirring between each one until melted and smooth.Or use double boiler method - Place chocolate in a heatproof bowl set over (not in) a saucepan of simmering water. Heat, stirring occasionally, until smooth, 4 to 6 minutes. Mix half of all of the ingredients into the melted chocolate and stir until evenly coated with the chocolate. Pour onto the parchment paper using a rubber spatula and spread chocolate mixture out. Don’t spread it out too thin, you want it to be about ½ inch thick.Quickly top with remaining fruit and nuts and press lightly into the bark. Place in the refrigerator for at least 20 minutes. When ready to serve, break apart with hands or cut into 2 inch pieces with a knife.Store at room temperature in an airtight container, up to 1 week. You could store it in the freezer but its unlikely to make it there, as it won't last that long! lol
