Ingredients
3/4cupcottage cheese
3/4cupplain Greek yogurt
1/4cupcocoa powder
1scoopprotein or collagen powder
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Chocolate Hard Shell
1/2cupchocolate chips
2teaspoonscoconut oil
Instructions
Blend cottage cheese, yogurt, cocoa powder, protein powder, honey and vanilla extract in a food processor until smooth and creamy.Pour into two dishes and freeze for 1-2 hours, stirring once halfway through.Once set, take out of the freezer and make the chocolate shell.
Chocolate Hard Shell
Place chocolate chips and coconut oil in small dish and microwave at 50% power with 10 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.When chocolate has melted and is smooth, pour over the mousse and refrigerate or freeze 10 minutes to set. Crack your hard shell and enjoy!
