Walnut Tahini Freezer Fudge

These insanely delicious, secretly healthy, decadent and rich, walnut, nut butter and creamy tahini freezer fudge is super quick and easy to prepare - guilt-free and put together with only 6 ingredients.

Ingredients

  • 1 cup walnuts, chopped
  • 1/2 cup tahini (sesame seed butter)
  • 1/2 cup cashew (or any other nut) butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting. Set aside.
    Add the tahini, cashew butter, melted coconut oil, honey and vanilla extract to a medium-sized mixing bowl and stir until everything is well combined.
    Stir in the chopped walnuts (reserve a small handful for later), and using a spatula, pour the mixture into the prepared loaf pan and smooth it out evenly.
    Sprinkle the reserved handful of chopped walnut on top and place the pan into the freezer for 30 minutes or until firm and set.
    Take the pan out and cut into 20 or more smaller squares.
    Store these in the freezer in a sealed container. NOTE – They WILL melt at room temperature quickly so these are best eaten right out of the freezer.
