Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup thick Greek-style yogurt
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 1 tablespoon cashew butter
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Toppings Optional

  • Dollop of whipped coconut cream - recipe below in notes
  • Fresh fruit or berries
  • Chocolate chips or shavings
  • Chopped nuts
  • Coconut shreds

Instructions

  • In a blender or food processor, combine cottage cheese, yogurt, protein powder, cashew butter, honey and vanilla.
    Blend on high until the mixture is silky and smooth. Taste test and add more honey or vanilla if you think it needs it.
    Spoon the mousse into a small serving bowl.
    Chill for 30 minutes if you would like it extra thick and cold.
    Top with your chosen toppings just before serving.
