Vanilla Cheesecake Protein Parfait For One

A Vanilla Cheesecake Parfait is made up of layers of strawberries, blueberries and a lightened-up no bake, vanilla cheesecake, protein mixture. Its rich and creamy and packs in over 25 grams of protein in a single hit.

Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup thick Greek-style yogurt, plain or vanilla
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh strawberries, chopped into small pieces
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings Optional

  • Dollop of whipped coconut cream – recipe below in notes
  • Fresh fruit or berries
  • Chopped nuts
  • Chocolate chips or shavings
  • Seeds like hemp or chia
  • Drizzle of nut butter
  • Coconut shreds

Instructions

  • Using a stand mixer or hand mixer with the whisk attachment, place the cottage cheese, yogurt, protein powder and vanilla into a small mixing bowl.
    Beat the mixture on medium high speed, scraping down the sides once or twice, until it is fluffy and smooth. Taste test and add more honey or vanilla if you think it needs it.
    Using a small glass, jar or bowl, layer the parfait starting with a layer of blueberries, then the cheesecake protein mixture, then a layer of strawberries.
    Refrigerate until ready to serve. Then go to town with your toppings. Be creative and make yourself a masterpiece of a parfait.  😊
