Ingredients

  • 2 ripe bananas, sliced and frozen
  • 1 cup frozen pineapple chunks
  • 1 scoop vanilla protein powder
  • 1/4 cup coconut milk (canned for creaminess) or almond milk
  • 1/4 cup Greek-style yoghurt or coconut yoghurt (optional but recommended)
  • 2 tablespoons desiccated coconut
  • 1/2 teaspoon vanilla extract
  • Squeeze of lime (optional for brightness)

Instructions

  • Slice ripe bananas and freeze in a single layer for at least 3 hours or overnight.
    Add frozen banana and pineapple to a high-speed blender or food processor.
    Add protein powder, coconut milk, yoghurt, shredded coconut and vanilla.
    Blend, scraping downsides as needed. It may look crumbly at first - keep blending. Add small splashes of milk only if necessary.
    Once smooth and thick like soft serve, scoop into a bowl.
    Optional toppings.
    Add toasted coconut, extra pineapple, chia seeds, or a drizzle of nut butter.
    If you prefer a firmer scoopable texture, freeze for 30–60 minutes after blending.

    The riper the banana before freezing, the sweeter your nice cream.
    For extra protein, add collagen peptides or an extra spoon of Greek yoghurt.
    Want it thicker? Use less liquid.
    Want it dairy-free? Use plant-based protein and coconut yoghurt.
