Ingredients

  • 1 cup cashews, soaked 3+ hours and drained
  • 1 cup canned (drained) pineapple
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut (plus extra for rolling)
  • 1/2 cup vanilla or unflavoured protein powder
  • 2-3 tablespoons passionfruit pulp (fresh or canned, no added sugar)
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  • Add cashews, dates, coconut, protein powder, vanilla, salt, coconut oil, and passionfruit pulp to a food processor.
    Blend until the mixture forms a sticky dough. Stop and scrape down the sides of the blender bowl as needed.
    If the mixture feels too dry, add 1 teaspoon of water or extra passionfruit pulp at a time until it holds together when pressed.
    Lastly add the pineapple and pulse a couple of times so it stays in chunks to give a pop of flavour in every bite.
    Roll into 12-14 tablespoon-sized balls (more or less as preferred).
    Roll in extra shredded coconut if desired.
    Chill in the fridge for at least 30 minutes to firm up.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
