Triple Coconut Protein Bars

My coconut bars are irresistibly delicious. They are thick, soft, and chewy, and take less than 10 minutes to prep!  An easy and healthy protein-rich snack, made with simple ingredients including three different types of coconut – shredded coconut, coconut cream and coconut oil. Enjoy them as a midday snack or a post workout dessert! The perfect good-for-you sweet tooth fix.

Ingredients

  • 3 cups desiccated coconut
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cup coconut oil, melted
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
    Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place desiccated coconut, hardened coconut cream, coconut oil, protein powder, honey and vanilla extract into a food processor and process until the mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your coconut bars.
    Taste test and add more honey or vanilla extract if you think it needs it.
    Press the mixture into the bottom of your pan or dish evenly. Refrigerate for 30  minutes to firm up then remove from pan, cut into 8-10 bars then melt the chocolate drizzle.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle the melted chocolate over the bars either using a spoon or a Ziplock bag with the corner cut off.
    Place the bars back in the fridge to let the chocolate set completely.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
