Ingredients

Cocoa Protein Centre

  • 1 cup soft, pitted dates
  • 1/2 cup almond flour or finely ground almonds
  • 1/4 cup vanilla or chocolate protein powder
  • 2 tablespoons cocoa powder
  • 1 tablespoon almond butter or cashew butter
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • 1-2 tablespoons milk of choice, as needed

White Chocolate Coating

  • 1 cup white chocolate chips or chopped white chocolate
  • 1 tablespoon coconut oil, to help thin the coating
  • Extra cocoa powder for dusting, optional

Instructions

  • If your dates are firm, soak them in warm water for 5–10 minutes, then drain them very well. Soft dates blend more easily and help bind the mixture together.
Add the dates, almond flour, protein powder, cocoa powder, nut butter, espresso powder, vanilla and salt to a food processor. Process until the mixture starts to clump together.
If the mixture is too dry, add milk a teaspoon at a time until it holds together when pressed between your fingers. If it feels too sticky, add a little extra almond flour or cocoa powder.
Roll the mixture into 12 even-sized balls and place them on a baking-paper-lined tray. Refrigerate for 20–30 minutes to firm up.

White Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Dip each chilled ball into the melted white chocolate, turning to coat completely. Lift it out with a fork, allow the excess chocolate to drip off, then place it back on the lined tray.
Before the coating sets, add a light dusting of cocoa powder or drizzle with melted dark chocolate if desired. Refrigerate for 15–20 minutes, or until the coating is firm.
Tips for Delicious Tiramisu Protein Balls
Choose your protein powder carefully: Vanilla gives a classic tiramisu flavour, while chocolate creates a richer centre. Different powders absorb moisture differently, so adjust the liquid as needed.
Want a stronger coffee flavour? Add another ½ teaspoon of espresso powder.
For easy dipping: Keep the balls chilled and work with a few at a time so they stay firm.
For a decorative finish: Drizzle the coated balls with dark chocolate and lightly dust withcocoa powder.
Storage: Keep in an airtight container in the refrigerator for up to 7 days. Freeze for up to 2 months and thaw in the refrigerator before serving.
