Ingredients

Date Filling

  • 1 cup dates, soaked 30 minutes and drained
  • 2 tablespoons sesame seeds, toasted

Tahini Cups

  • 1/2 cup tahini (sesame seed butter) well stirred
  • 2 tablespoons coconut oil, melted

Instructions

  • Place 6 paper liners into a 12-muffin pan. Or use silicon muffin cups or mini ones if preferred.
Mash the dates to a smooth paste in a small bowl then fold in the sesame seeds.
Mix the tahini and melted coconut oil in a bowl.
Spoon about 1/2 tablespoon of the tahini mixture into cupcake moulds, covering the bottom and pushing some up the sides to form a little cup.
Then add about 1 teaspoon of the date mixture. Cover with another 1/2 tablespoon of the tahini mixture. If you have mixture left over just divide it up between the cups.
Freeze for about an hour, then enjoy!
Store in an air-tight container in the freezer for up to 3 months.
