Ingredients
1cupdried figs, stalks removed
1cupBrazil nuts
1/2cupalmonds
1juice and zest of an orange
2tablespoonscoconut oil
1/2cupany nut or seed butter
1/2cuppumpkin seeds
1/2cuphemp hearts (seeds)
1/4cupgoji berries
1/4 cupchia seeds
2teaspoonsvanilla extract
Instructions
Line a square baking tin with baking parchment. Place figs, nuts, seeds, orange juice and zest, coconut oil, nut butter and vanilla extract in blender and process until mixture well combined. Don't over blend it to leave some texture in the mixture.
Finally add the almonds and goji berries, pulsing a few times to just cut up some of the almonds. Most of the almonds should stay whole, which adds a nice crunch to the soft bars.Press the mix into the prepared tin, spreading it out evenly. Refrigerate for about 1 hour, then cut up into squares to serve,
