Sun-Butter Protein Soft Serve With Date Caramel

This delicious soft serve ice cream is made with Sun-Butter a brand of sunflower seed butter.It is an edible food paste similar to peanut butter, but made from sunflower seeds. This homemade frozen treat is made in the blender in minutes and will be your new favorite.

Ingredients

Soft Serve

  • 1 13.5 oz can coconut cream or milk, full fat
  • 1 cup Sun-Butter (sunflower seed butter) (or any other nut butter) **
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Date Caramel Sauce

  • 1 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup coconut milk or cream, full fat
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Instructions

Soft Serve

  •  **If using a sunflower seed butter with added sugar, reduce or omit the maple syrup.
    Shake the can of coconut milk so the liquid and solid parts are evenly mixed.
    Pour into an ice cube tray or mini muffin pan and freeze overnight.
    The next day, combine all the ingredients in a blender and blend until smooth, adding milk and using the tamper as necessary.
    Serve immediately or transfer to a piping bag and swirl into cups/cones.

Date Caramel Sauce

  • Combine all the ingredients in a high speed blender.
    Blend on high until very smooth and creamy. You can adjust the consistency by adding more coconut milk if it is too thick to pour easily.
    Drizzle the caramel sauce on top of the soft serve. Add toppings if desired.
     Keep any extra in an air-tight container in the fridge.
