Stuffed Cheesecake Date Protein Balls

These no bake protein snack balls are created with almonds, dates and coconut and have a delightful cheesecake drop in the centre. These make such a lovely gift, and are delish in a loved one’s lunchbox too! A new spin on our favorite protein/energy balls.

Ingredients

  • 1 cup almonds or cashews
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut +extra for rolling in
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons cocoa powder
  • 2 tablespoons almond (or any other nut or seed) butter

Cream Cheese Stuffing

  • 1/4 cup cream cheese, softened to room temperature

Instructions

  • Add the almonds, dates, coconut, protein powder, cocoa powder and almond butter to a food processor.
    Blend until broken down and mixture becomes sticky and holds together when pressed between your fingers.
    Be careful not to over process as its nice to have some different sized ‘bits’ in your energy balls.
    Remove a small bit of dough (about 1-2 tablespoons) and roll into a ball in the palm of your hand.
    Use your finger to put an indent into the ball (this serves as a space for the cream cheese spread).
    Take 1/2 teaspoon of cream cheese spread and place it in the dent of the dough.
    Cupping the filled ball, pinch the edges closed around the cream cheese.
    Roll the filled snack ball back into a round sphere.
    Repeat with the remaining mixture rolling each one in desiccated coconut and place on a plate.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
