Ingredients

Crunch Base

  • 1 1/2 cups crispy rice cereal or puffed rice
  • 1/4 cup almond butter
  • 1 tablespoon maple syrup or honey
  • 1 scoop vanilla protein powder

Strawberry Yogurt Layer

  • 2 cups thick Greek yogurt
  • 1 cup strawberries, roughly chopped
  • 1 scoop vanilla protein powder
  • 1 tablespoon maple syrup or honey (optional)
  • 1 teaspoon vanilla extract

Optional Toppings

  • Freeze-dried strawberries
  • White chocolate drizzle
  • Fresh strawberry pieces

Instructions

Crunch Base

  • Line a 12-cavity muffin tin with paper or silicone liners.
    In a bowl, mix crispy rice cereal, almond butter, maple syrup and protein powder until evenly coated.
    Press a spoonful of the mixture into the bottom of each muffin cup. 

Strawberry Yogurt Layer

  • Whisk together yogurt, strawberries, protein powder, sweetener and vanilla until smooth.
    Spoon the strawberry mixture over the crunch bases.
    Top with freeze-dried strawberries or other toppings if desired.
    Refrigerate for 2 hours or freeze for 1 hour until set.
    Serve chilled.
    Store in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 2 weeks.
