Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 tablespoon honey, to sweeten, (if desired)

Chocolate Base

  • 1 cup milk chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Line a 24-count mini muffin pan with paper liners or use a silicone muffin pan.
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Spoon about 1 tablespoon of melted chocolate into the bottom of each muffin mold. Place in the refrigerator or freezer for about 5-10 minutes to harden slightly (it doesn't need to harden all the way).
While chocolate is chilling, add yogurt to a medium bowl. Stir in honey (if using) and protein powder until well combined. Fold in chopped strawberries.
Spoon about 1 tablespoon of yogurt mixture on top of each chocolate cup.
Freeze for 2-3 hours, or until frozen. When ready to serve, remove yogurt bites from molds and let thaw for several minutes, if desired.
Yogurt bites will keep in a freezer-safe container or bag in the freezer for up to three months.
