Ingredients
1packet(approx. 85 g) strawberry gelatin powder or sugar free jello
1cupboiling water
1cupcold water
1 1/2cupsthick Greek-style yogurt
1scoopvanilla or strawberry protein powder
Toppings Optional
Fresh sliced strawberries
Freeze-dried strawberry pieces
Dollop of whipped coconut cream – recipe below in notes
Melted dark chocolate drizzle
Instructions
In a bowl, dissolve strawberry gelatin powder in boiling water, stirring until completely dissolved.Add cold water and allow mixture to cool slightly (it should be cool but not set).In a separate bowl, whisk Greek yogurt and protein powder until smooth.Slowly fold the cooled gelatin mixture into the yogurt mixture, stirring gently until combined.Pour into 4 serving cups or a large dish.Refrigerate for 2–3 hours, or until set into a fluffy mousse texture.Add toppings just before serving if desired. Store covered in the fridge for up to 4 days.
