Ingredients

  • 1 packet (approx. 85 g) strawberry gelatin powder or sugar free jello
  • 1 cup boiling water
  • 1 cup cold water
  • 1 1/2 cups thick Greek-style yogurt
  • 1 scoop vanilla or strawberry protein powder

Toppings Optional

  • Fresh sliced strawberries
  • Freeze-dried strawberry pieces
  • Dollop of whipped coconut cream – recipe below in notes
  • Melted dark chocolate drizzle

Instructions

  • In a bowl, dissolve strawberry gelatin powder in boiling water, stirring until completely dissolved.
    Add cold water and allow mixture to cool slightly (it should be cool but not set).
    In a separate bowl, whisk Greek yogurt and protein powder until smooth.
    Slowly fold the cooled gelatin mixture into the yogurt mixture, stirring gently until combined.
    Pour into 4 serving cups or a large dish.
    Refrigerate for 2–3 hours, or until set into a fluffy mousse texture.
    Add toppings just before serving if desired.
     Store covered in the fridge for up to 4 days.
