Strawberry Shortcake Protein Bites

Ingredients

  • 1 cup rolled oats
  • 1/2 cup coconut flour or oat flour (oats blended to a flour(
  • 1/2 cup thick Greek-style yogurt
  • 1/2 cup cashews
  • 1/4 cup protein or collagen powder, plain or vanilla
  • 3-5 fresh strawberries
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon any milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon strawberry extract (optional)
  • 1/2 cup freeze-dried strawberries

Instructions

  • In a food processor add all ingredients except the freeze-dried strawberries and process until combined.
    Add the freeze-dried strawberries and pulse a few times. Don’t over blend. There should be chunks of the dried strawberries.
    Scoop out a spoonful of the batter and roll it into a ball. Repeat until you run out of batter (approximately 14 bites).
    Place in the refrigerator to chill before eating
    Store in the fridge for up to 1 week or freezer for up to 3 months.
