Ingredients
1cuprolled oats
1/2cupcoconut or almond flour
1/2cupGreek yogurt
1scoopprotein or collagen powder – vanilla or unflavoured
1tablespoonany milk
1cupfresh strawberries
1/2cupfreeze-dried strawberries (or more fresh strawberries)
1/4cupcoconut oil, melted
1/4cuphoney or maple syrup
1teaspoonvanilla extract
Instructions
Add all ingredients except dried and fresh strawberries in a food processor and process until they are well combined. Add the fresh and freeze-dried strawberries and pulse a few times. Don’t over blend. There should be chunks of both types of strawberries.Scoop out a spoonful of the batter and roll it into a small (1-inch) ball. Repeat until you run out of batter (approximately 20 bites).Place in the refrigerator to chill before eating.Will keep up to 1 week in fridge or up to 3 months in freezer.
