Strawberry Shortcake Protein Bites

These little bites of happiness are packed full of strawberry flavor. Not only will adults love them but they have been taste-tested and approved by kids as well!
They are sweet (without refined sugar!), tangy, healthy and are great for snacking.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup coconut or almond flour
  • 1/2 cup Greek yogurt
  • 1 scoop protein or collagen powder – vanilla or unflavoured
  • 1 tablespoon any milk
  • 1 cup fresh strawberries
  • 1/2 cup freeze-dried strawberries (or more fresh strawberries)
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Add all ingredients except dried and fresh strawberries in a food processor and process until they are well combined.
    Add the fresh and freeze-dried strawberries and pulse a few times. Don’t over blend. There should be chunks of both types of strawberries.
    Scoop out a spoonful of the batter and roll it into a small (1-inch) ball. Repeat until you run out of batter (approximately 20 bites).
    Place in the refrigerator to chill before eating.
    Will keep up to 1 week in fridge or up to 3 months in freezer.
