Ingredients

  • 1 cup strawberries, fresh or frozen
  • 1/4 cup cottage cheese
  • 1/4 cup thick Greek-style yogurt
  • 1 scoop protein or collagen peptides powder
  • 1 tablespoon peanut (or any nut or seed) butter
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon vanilla extract

Toppings Optional

  • Fresh strawberries
  • Chopped nuts
  • Drizzle of nut butter
  • Shredded coconut

Instructions

  • In a blender or food processor, combine strawberries, cottage cheese, yogurt, protein powder, nut butter, honey and vanilla.
    Blend on high until the mixture is silky and completely smooth.
    Spoon the mousse into a small serving bowl or jar.
    Chill for 30 minutes if you would like it extra thick and cold.
    Top with fresh berries or chopped nuts just before serving.
