Ingredients

  • 1 ripe banana, sliced and frozen
  • 1 1/2 cups strawberries (fresh or frozen)
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons maple syrup or honey (optional)
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Add frozen banana, strawberries, protein powder, maple syrup (if using), and vanilla to a blender.
    Blend until smooth and creamy, scraping down the sides as needed.
    Pour the mixture into silicone ice cube trays or small popsicle molds. Insert mini popsicle sticks (breaking full-size sticks in half works perfectly).
    Freeze for 4–6 hours, or until fully set.

Chocolate Coating

  • Place chocolate chips and coconut oil in tall glass (for easier dunking) and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pop out the frozen strawberry cubes and working quickly, dip one cube at a time into the melted chocolate until it is fully coated. Lift from the glass or bowl of chocolate and let any excess drip off, place it onto a tray lined with baking paper. Repeat with the remaining cubes and allow chocolate to set.
    Store in an airtight container in the freezer for up to 2 weeks.

    For a creamier nice cream, let the pops sit at room temp for a few minutes before eating.
