Ingredients

  • 1 cup fresh strawberries, chopped
  • 1/2 cup Greek yogurt
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut butter, softened (place jar in warm water for a few minutes)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Toppings

  • Freeze-dried strawberry crumbs
  • Shredded coconut
  • White chocolate drizzle
  • Dark chocolate drizzle

Instructions

  • Add Greek yogurt, coconut butter, protein powder, maple syrup, vanilla, and sea salt to a food processor and process until smooth and creamy.
    Add strawberries and pulse a couple of times to combine but still leave chunks for pops of flavour and colour.
    Spoon the mixture into 10-12 silicone molds or mini muffin liners.
    Place in the freezer for 2–3 hours until firm.
    Remove from molds and drizzle with chocolate or sprinkle with freeze-dried strawberry crumbs if desired.
    Enjoy straight from the freezer or allow to soften for a few minutes before eating.
    Store in the freezer for up to 2 months
    Keep in an airtight container
    Allow to sit at room temperature for 2–3 minutes before serving
    Delicious Variations
    Strawberry Cheesecake
    Add 2 tablespoons cream cheese to the mixture.
    Chocolate Strawberry
    Drizzle generously with melted dark chocolate.
    Coconut Berry Bliss
    Roll in shredded coconut after freezing.
     Mixed Berry Version
    Replace half the strawberries with raspberries.
