Strawberry Cheesecake Protein Jars

Creamy Strawberry Cheesecake Protein Jars made with blended cottage cheese, Greek yogurt and fresh strawberries layered over a nutty sweet date crust and finished with a silky melted chocolate topping. This easy no-bake dessert is rich, satisfying and packed with protein. 🤎🥣

Ingredients

Base Crust

  • 1 cup raw nuts (almonds, walnuts, or pecans)
  • 1 cup dates, (if dry, soak 10 minutes in warm water and drain)

Strawberry Cheesecake Filling

  • 1 cup cottage cheese
  • 1 cup Greek yogurt
  • 1 1/2 cups fresh strawberries
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 3/4 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

Base Crust

  • Add nuts to a blender and blend until broken down and crumbly. Add dates and continue to blend until well combined.
    Divide mixture between four serving jars and press lightly into the bottom.

Strawberry Cheesecake Filling

  • Add cottage cheese, Greek yogurt, strawberries, maple syrup and vanilla to a blender. Blend until completely smooth and creamy.
    Divide filling evenly among the jars.
    Chill for at least 1 hour.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour a thin layer of melted chocolate over each jar.
    Return jars to the refrigerator until chocolate is set.
    Garnish as desired and serve.
    Notes:
    For extra protein, add a scoop of vanilla protein powder to the filling.
    Frozen strawberries can be used if thawed and drained first.
    Store covered in the refrigerator for up to 4 days.
    For a softer chocolate topping, add an extra teaspoon of coconut oil.
