Strawberry Cheesecake Protein Bites

These Strawberry Cheesecake Protein Bites are a rich, creamy, no-bake dessert or snack that combines a luscious cream cheese filling with a smooth chocolate coating.
Topped with festive sprinkles, they are perfect for holiday celebrations or as a thoughtful homemade gift.

Ingredients

  • 1 1/2 cups strawberries, fresh (tops removed) or frozen (unthawed, drained)
  • 1/2 cup cream cheese
  • 1/2 cup coconut flour
  • 1/4 cup protein or collagen powder – unflavoured or vanilla
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 lemon, juice and zest

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 2 tablespoons sprinkles of choice

Instructions

  • Combine the strawberries, cream cheese, coconut flour, protein powder, coconut oil, honey, lemon juice and zest in a food processor. Process until the strawberries are mixed through the cream cheese.
    The mixture should be thick, not runny, imagine playdough consistency. Don't over process.
    Roll the batter into 16-20 tablespoon sized balls and place on a parchment lined tray. Place in the freezer for 30 minutes to set while you melt the chocolate coating.

Chocolate Coating

  • Place chocolate chips and coconut oil in medium dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites from the freezer and after checking they are firm and set, skewer each bite and roll in the melted chocolate or use a fork to hold each bite and spoon over the melted chocolate then place back on the parchment lined tray.
    If you have chocolate left over simply drizzle it over the bites or dip twice for extra coating.
    Top with your choice of sprinkles and place bites back into the freezer for 1-2 hours.
    Store up to 1 week in fridge or up to 3 months in freezer. If frozen, remove from freezer for 10 minutes before eating to allow them to soften.
