Strawberry Cheesecake Protein Bark

Game changer right here! If you are a cheesecake lover but not a lover of the time and effort it takes to actually make protein cheesecake, this one's for you. Greek yogurt is the star of the show, providing the perfect creamy, frozen base with almost 25grams of protein per cup for a filling and satisfying snack. This easy-to-make treat requires 5 base ingredients, 4 toppings and just 5 minutes of prep before letting the freezer do the rest of the work!

Ingredients

Base Layer

  • 1 1/2 cups thick Greek-style yogurt, vanilla or unflavoured
  • 1/2 cup cream cheese
  • 1/4 cup protein or collagen peptides powder, vanilla or unflavoured
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup fresh strawberries, chopped
  • 1/2 cup chopped nuts of choice
  • 1/4 cup dark chocolate chips
  • 1/4 cup granola

Instructions

Base Layer

  • In a small bowl stir together yogurt, cream cheese, protein powder, honey and vanilla. Whisk well to combine.
    Line parchment paper onto a 9x13-inch sheet pan, then pour in the yogurt mixture and spread out evenly with a spatula or back of a spoon. Should be around 1/4-1/2 inches thick.

Toppings

  • Sprinkle the strawberries, nuts, granola and chocolate chips over the top, evenly, slightly pressing it into the yogurt with your hands.
    Freeze for about 1 hour, or until completely frozen.
    Remove from freezer, and break or cut into about 6 slices to create bark.
    Serve immediately and enjoy, or wrap in plastic, and refreeze up to 2 weeks.
