Ingredients

Cheesecake Protein Centre

  • 3/4 cup cream cheese (or dairy-free alternative), softened (see note below)
  • 1/2 cup vanilla protein powder
  • 1/2 cup almond flour (or oat flour)
  • 1/4 cup freeze-dried strawberries, crushed
  • 2-3 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract

Optional

  • 1/2 teaspoon lemon zest

White Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

Cheesecake Protein Centre

  • In a bowl, mix softened cream cheese (softening methods below), protein powder, almond flour, maple syrup, vanilla, and optional lemon zest.
    Stir until a thick dough forms. Fold in crushed freeze-dried strawberries.
    If mixture seems too soft, refrigerate for 10–15 minutes to firm it up.
    Roll mixture into 12-14 bite-sized balls and place on a lined tray.
    Freeze for 15–20 minutes to firm before coating.

White Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, using two forks, dip one bite at a time into the bowl of melted chocolate until it is fully coated. Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining balls.  
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.   
    Place back on lined tray and refrigerate until chocolate is set.
    Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months. Best enjoyed chilled.
    Top 3 Methods to Soften Cream Cheese
    Countertop (Best Method): Remove the block from the fridge, cut it into small, 1-inch cubes, and let it sit on a plate at room temperature for 20 to 30 minutes.
    Warm Water Bath (Fastest & Safe): Keep the cream cheese in its sealed, foil wrapper. Place the block in a bowl of warm (not boiling) water for 10-15 minutes.
    Microwave (Quickest - Use Caution): Remove all foil packaging. Place the block on a microwave-safe plate and microwave on high (or 50% power for more control) for 15-20 seconds.
