Ingredients

Coconut Filling

  • 1 cup coconut butter, softened, store bought or homemade recipe below in notes
  • 1/2 cup vanilla protein powder
  • 2 tablespoons almond butter or cashew butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/8-1/4 teaspoon cayenne pepper (adjust to taste)
  • Pinch of sea salt 

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Flaky sea salt
  • Toasted coconut flakes
  • Extra cinnamon
  • Chili flakes (very light sprinkle)

Instructions

  • Line a 12-hole mini muffin tin with paper liners or use silicone molds.
    If your coconut butter is solid, soften by placing the jar in warm water for a few minutes or give it a couple of bursts in the microwave.
    In a bowl, combine the coconut butter, protein powder, almond butter, maple syrup, vanilla, cinnamon, cayenne and sea salt until smooth.
    Place the mixture in the refrigerator for 10-15 minutes if it feels too soft. 

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spoon about 1 teaspoon of melted chocolate into each mold and spread slightly up the sides.
    Freeze for 5-10 minutes until firm.
    Add a spoonful of the coconut filling to each cup.
    Cover with the remaining melted chocolate.
    Sprinkle with flaky sea salt, toasted coconut or a tiny pinch of cinnamon if desired.
    Refrigerate or freeze until completely set before serving.
    Store in an airtight container in the refrigerator for up to one week or freezer for up to3 months.

    Warm the coconut butter gently if it's firm before mixing.
    Use silicone muffin molds for easy removal.
    If you prefer a milder flavor, reduce the cayenne to just a tiny pinch.
    Taste the filling before assembling and adjust the spice level to suit your preference. A tiny pinch of cayenne goes a long way, so start small.
    Cashew butter creates an extra-creamy filling, while almond butter adds a slightly nuttier flavor.
    Store the cups in the refrigerator during warmer months or keep them in the freezer for an extra-firm texture.
