Ingredients
1cupsoft dates (if hard, soak 30 minutes and drain)
1cuprolled oats
1/2cupnatural peanut butter
1scoopvanilla or chocolate protein powder
2tablespoonscocoa powder
1/2cuproasted, peanuts, chopped, divided
1teaspoonvanilla extract
Pinch of sea salt
1-2tablespoonsalmond milk or water (if needed)
Chocolate Coating
1/2cupchocolate chips
1teaspooncoconut oil
Toppings Optional
Extra chopped peanuts
Flaky sea salt
Instructions
Add oats to a food processor and pulse a few times to break them down slightly.Add dates, peanut butter, protein powder, cocoa powder, vanilla, and salt. Blend until the mixture becomes sticky and starts clumping together.If the mixture feels too dry, add almond milk or water one tablespoon at a time until it holds together.Stir or pulse in half the chopped peanuts briefly so they remain chunky.Scoop tablespoon-sized portions and roll into 12-14 balls.Chop up the remaining peanuts into small pieces for topping. Set aside.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once the chocolate is melted dip each ball into the melted chocolate so that half of the ball is coated in chocolate. Sprinkle the ball with crushed peanuts and sea salt. Repeat this process until all the balls are coated in chocolate.Set the balls on a plate and transfer them to the freezer for 20 minutes or until the chocolate has set.Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
