Ingredients

Brownie Base

  • 3/4 cup almond flour
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract

Nut Butter Filling

  • 1/4 cup peanut (or any other nut or seed) butter
  • 2 tablespoons honey or maple syrup
  • 1/2 cup whole peanuts
  • 2 tablespoons mini chocolate chips

Instructions

  • To a medium mixing bowl, add almond flour, peanut butter, protein powder,  honey, cocoa powder and vanilla extract and mix into a dough. If your batter is too thick, add a splash of water or more honey; if too runny, add more almond flour or protein powder.
    Divide into six pieces and press each piece into a muffin tray, pressing the dough up the sides to create a "cup".
    Mix peanut butter and honey in a bowl and microwave for 10 seconds or place the bowl in some hot water to melt the ingredients so they can be smoothly mixed together.
    Fill each cup with a teaspoon of the peanut butter mixture.
    Top with peanuts and mini chocolate chips.
    Let cups set for 10 minutes in refrigerator.
    Store the cups in the refrigerator for up to 1 week or freezer for up to 3 months.
