Ingredients
1 1/4cupdates, soaked 30 minutes and drained
1/2cupcoconut butter – store bought or recipe below in notes
1/2cupcashews or any other nuts
1teaspoonvanilla extract
Flaky sea salt
Instructions
Place the dates, coconut butter, cashews and vanilla extract into a food processor and process until well combined into a thick creamy dough. Be careful not to over process as its nice to have texture variance and different sized “bits” in your date candy.Scoop out into 8 silicone bar mold, cupcake parchment wrappers, or a small baking dish lined with parchment (for easy removal) (I used a mini 7 x 5-inch loaf pan). Smooth the top out until it is even. Sprinkle with salt if desired.Place in freezer to firm up and set.Remove from the freezer and cut into 8 bars or more smaller bite-size pieces.Store in the freezer in an air tight container for up to 3 months.
