Salted Caramel Protein Pudding

A rich and creamy salted caramel protein pudding made with cashews, dates and protein powder. Naturally sweetened, silky smooth and packed with nourishing ingredients, this easy no-bake dessert is perfect for healthy snacking or dessert cravings. 🍂🥣

Ingredients

  • 1 cup raw cashews, soaked 3+ hours and drained
  • 4 soft Medjool dates, pitted
  • 1 scoop vanilla or caramel protein powder
  • 1/2 cup milk of choice
  • 1 tablespoon maple syrup (optional for extra sweetness)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt, plus extra for topping
  • 1 tablespoon nut butter (optional for extra richness) 

Toppings Optional

  • Crushed nuts
  • Dark chocolate shavings
  • Coconut flakes
  • Extra flaky sea salt
  • Chopped dates
  • Granola
  • Banana slices
  • Caramel drizzle

Instructions

  • Soak cashews in water for at least 3 hours or overnight. Drain and rinse well.
    Add soaked cashews, dates, protein powder, milk, maple syrup if using, vanilla, sea salt and nut butter to a high-speed blender.
    Blend until completely smooth and creamy.
    Taste and adjust sweetness or salt if desired.
    Spoon into 2 jars or bowls.
    Chill for at least 30 minutes to thicken.
    Top with extra sea salt or desired toppings before serving.
    Notes
    Use caramel protein powder for stronger caramel flavour.
    Add more milk if needed for blending.
    Store in fridge up to 4 days.
    Freeze briefly for a thicker mousse-like texture.
