1cupraw cashews, soaked 3+ hours and drained
4soft Medjool dates, pitted
1scoopvanilla or caramel protein powder
1/2cupmilk of choice
1tablespoonmaple syrup (optional for extra sweetness)
1teaspoonvanilla extract
1/4teaspoonsea salt, plus extra for topping
1tablespoonnut butter (optional for extra richness)

Instructions
Soak cashews in water for at least 3 hours or overnight. Drain and rinse well.Add soaked cashews, dates, protein powder, milk, maple syrup if using, vanilla, sea salt and nut butter to a high-speed blender.Blend until completely smooth and creamy.Taste and adjust sweetness or salt if desired.Spoon into 2 jars or bowls.Chill for at least 30 minutes to thicken.Top with extra sea salt or desired toppings before serving.NotesUse caramel protein powder for stronger caramel flavour.Add more milk if needed for blending.Store in fridge up to 4 days.Freeze briefly for a thicker mousse-like texture.
