Salted Caramel Almond Protein Yogurt Clusters

These chocolate-drizzled yogurt protein clusters are a healthy dessert option that your whole family will love! The perfect after-dinner treat. Sweet, simple, delicious and they look beautiful for holiday parties or as quick gifts.

Ingredients

  • 1 cup Greek-style yogurt of choice
  • 1 cup dates, soaked 30 minutes then drained
  • 1/2 cup almonds or walnuts
  • 2 scoops protein or collagen powder
  • 1/4 cup chocolate chips or cacao nibs
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt

Instructions

  • Place almonds in a food processor and process until broken down and crumbly. Add yogurt, dates, protein powder and vanilla extract and continue to process until well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your yogurt clusters
    Lastly add chocolate chips to the food processor and pulse a couple of times to combine.
    Scoop 5-6 dollops of the mixture onto a parchment lined baking sheet depending on your preferred size, then spread out a little so they look like chunky cookies.
    Freeze for about 1 hour.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle melted chocolate over each cluster with a spoon or if you prefer dunk each one part way into the melted chocolate to cover one half of the cluster.
    Freeze for another 10-15 minutes until the chocolate sets.
    Keep stored in freezer for up to 3 months.
