Reese’s Cheesecake Protein Cup For One

This magic shell Reese’s Cheesecake Cup is another one of the viral recipes trending on social media websites.  Made with a base of cottage cheese and yogurt, a homemade chocolate sauce, and a few other simple ingredients, this is healthy way to enjoy a super healthy treat or snack that tastes like soft serve ice cream.

Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup thick Greek-style yogurt, plain or vanilla
  • 1 scoop protein or collagen peptides powder, plain or vanilla
  • 1 tablespoon peanut (or any nut or seed) butter
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon vanilla extract

Magic Shell Topping

  • 2 tablespoons chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Put all of the ingredients into a blender.
    Blend on high until the mixture is silky and completely smooth.
    Pour into serving glass or dish.

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted drizzle a thin layer over the top of the cheesecake cup.
    Chill for 30 minutes if you would like it extra thick and cold.
