Raspberry Chia Protein Pudding

Ingredients

  • 1 cup milk of choice - almond, coconut, or hemp recommended
  • 1/2 cup Greek-style yogurt unsweetened/unflavored
  • 2 scoops protein or collagen peptides powder
  • 1/4 cup freeze-dried raspberries or ½ cup fresh or frozen raspberries
  • 2 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings Optional

  • Dollop of whipped coconut cream – recipe below in notes
  • Fresh berries
  • Sprinkle of freeze-dried raspberries
  • Chopped nuts
  • Seeds like hemp or sunflower

Instructions

  • In a medium bowl add milk, yogurt, protein powder, raspberries, honey and vanilla extract and whisk to combine.
    Add chia seeds,and whisk to combine. Allow the mixture to sit about 5 minutes then whisk again. Continue with this process, whisking about every 5 minutes, until the mixture has begun to thicken. This prevents the chia seeds from clumping.
    Pour the mixture into 2 small glasses or mason jars and refrigerate, for at least an hour until set, preferably overnight. It will continue to thicken as it chills.
    Place a dollop of whipped coconut cream, a sprinkling of dried raspberry and fresh raspberries and you are ready to enjoy.
