Ingredients

Oatmeal Crust

  • 1/4 cup rolled oats
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon coconut oil
  • A little milk (only if necessary)

Greek Yogurt Cheesecake

  • 1/3 cup cottage cheese
  • 1/3 cup thick Greek-style yogurt
  • 1 scoop protein or collagen peptides powder
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Toppings Optional

  • Fresh fruit or berries
  • Chopped nuts
  • Fresh fruit or berries
  • Coconut shreds

Instructions

  • Line a small cheesecake mold or small dish with parchment paper so that the cheesecake won’t stick to the sides.

Oatmeal Crust

  • In a small bowl, combine together oats, honey and coconut oil. Mix well, until you get a doughy texture. If the mixture seems a little dry add milk, one teaspoon at a time until it comes together.
    Press oat mixture to the bottom of the prepared cheesecake mold.  

Greek Yogurt Cheesecake

  • In a same small bowl (no need to wash), whisk together cottage cheese, yogurt, protein powder, honey and vanilla extract until smooth and creamy.
    Transfer the mixture into the cheesecake mold, on top of the oatmeal crust.
    Refrigerate overnight or for at least 2 hours before serving.
    Top with your chosen toppings.
