Oatmeal Crust
1/4cuprolled oats
1tablespoonhoney or maple syrup
1/2teaspooncoconut oil
A little milk (only if necessary)
Greek Yogurt Cheesecake
1/3cupcottage cheese
1/3cupthick Greek-style yogurt
1scoopprotein or collagen peptides powder
1tablespoonhoney or maple syrup
1/2teaspoonvanilla extract

Instructions
Line a small cheesecake mold or small dish with parchment paper so that the cheesecake won’t stick to the sides.
Oatmeal Crust
In a small bowl, combine together oats, honey and coconut oil. Mix well, until you get a doughy texture. If the mixture seems a little dry add milk, one teaspoon at a time until it comes together. Press oat mixture to the bottom of the prepared cheesecake mold.
Greek Yogurt Cheesecake
In a same small bowl (no need to wash), whisk together cottage cheese, yogurt, protein powder, honey and vanilla extract until smooth and creamy.Transfer the mixture into the cheesecake mold, on top of the oatmeal crust.Refrigerate overnight or for at least 2 hours before serving.Top with your chosen toppings.
