Ingredients

  • 1/4 pineapple, peeled and cut into chunks
  • 2-3 inch piece of fresh ginger, peeled
  • 1/2 cup coconut water
  • 1 lemon, juice
  • 1 tablespoon apple cider vinegar
  • 1 pinch cayenne pepper

Instructions

  • Place all ingredients in a blender. Blend everything together until smooth.
Place a mesh strainer over a bowl or measuring cup and pour the liquid over the sieve. Press the pulp with a spoon or small glass to squeeze all the liquid out of it.
Pour the liquid into small glasses or transfer to a small sealed glass container. Keep refrigerated. It will last for about 3-4 days stored in the fridge. Stir before drinking.
To store: Keep the strained juice in an airtight container or pitcher and refrigerate for up to 3 days.
To freeze: Pour the ginger shot juice into ice cube trays and freeze until solid. Transfer the frozen cubes to a ziplock bag and freeze for up to 1 month. Let as many cubes as you need thaw in the fridge overnight, then drink the next day!
