Ingredients

  • 1 1/2 cups heavy whipping cream or chilled full-fat coconut cream
  • 1 scoop vanilla or coconut protein powder
  • 2-3 tablespoons powdered monk fruit sweetener, maple syrup, or honey, to taste
  • 1/2 cup finely chopped fresh or canned pineapple, very well drained
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Add-Ins

  • 2 tablespoons shredded coconut
  • 1 teaspoon finely grated lime zest
  • 1 tablespoon lime juice
  • 2 tablespoons finely chopped mango
  • 1-2 tablespoons freeze-dried pineapple powder

Optional Toppings

  • Toasted coconut
  • Finely chopped pistachios or macadamias
  • Small pineapple pieces
  • Lime zest
  • Freeze-dried fruit
  • Melted dark or white chocolate
  • Sprinkles

Instructions

  • Chill a mixing bowl and beaters for about 10 minutes.
    Make sure the pineapple is very well drained and pat dry with paper towels to remove excess moisture.
    Add the heavy cream or chilled coconut cream to the bowl.
    Whip until soft peaks begin to form.
    Add the protein powder, sweetener, vanilla, and salt.
    Continue whipping until firm peaks form.
    Gently fold in the chopped pineapple and any optional add-ins.
    Transfer the mixture to a piping bag or use a spoon to create small dollops.
    Pipe or spoon bite-sized portions onto a baking paper-lined tray or into silicone mini moulds or ice cube trays.
    Add your chosen toppings.
    Freeze for 2–3 hours, or until completely firm.
    Transfer to an airtight freezer container.
    Store in the freezer for up to 1 month. Let the bites sit at room temperature for 1–2 minutes before eating for a softer, creamier texture.
     Endless Flavour Variations
    Once you have made the basic pineapple version, it's easy to get creative.
    Pineapple Coconut: Use coconut cream and add shredded coconut.
    Pineapple Lime: Add fresh lime zest and a little lime juice.
    Pineapple Mango: Fold in finely chopped mango.
    Pina Colada: Add coconut,pineapple, and a tiny splash of vanilla.
    Pineapple Berry: Add freeze-dried raspberries or strawberries.
    Chocolate Pineapple: Dip the frozen bites in dark chocolate.
    Tropical Crunch: Add chopped macadamias or toasted coconut.
    You can also use vanilla, coconut, or even unflavoured protein powder depending on your preference.
