Ingredients

  • 2 ripe bananas, sliced, frozen
  • 2 cups frozen pineapple chunks
  • 1 scoop vanilla protein powder
  • 1/3 cup full-fat coconut milk
  • 1-2 tablespoons maple syrup or honey (taste test)
  • 1/2 teaspoon vanilla extract (optional)
  • 1-3 tablespoons extra coconut milk, if needed for blending

Optional Toppings

  • Toasted coconut flakes
  • Fresh pineapple chunks
  • Sliced banana
  • Chopped macadamias
  • Passionfruit pulp
  • Hemp seeds
  • Granola
  • Lemon or lime zest

Instructions

  • Add the frozen banana, frozen pineapple, protein powder, coconut milk, maple syrup and vanilla extract (if using) to a high-speed blender or food processor.
    Blend until thick and creamy, stopping to scrape down the sides as needed.
    If the mixture is too thick to blend, add extra coconut milk one tablespoon at a time. Use as little as possible to keep the texture thick like soft-serve.
    Serve immediately for the creamiest soft-serve consistency.
    If you prefer a firmer texture, transfer to a freezer-safe container and freeze for 20–30 minutes before scooping.
