Ingredients

  • 2 cuos frozen pineapple chunks
  • 1/2 cup coconut milk or milk of choice
  • 1 scoop vanilla protein powder
  • 1/4 cup Greek yogurt or coconut yogurt (optional for extra creaminess)
  • 1-2 tablespoons desiccated coconut
  • 1/2 teaspoon vanilla extract
  • Small squeeze lime juice (optional)

Optional Toppings

  • Toasted coconut flakes
  • Fresh pineapple chunks
  • Granola
  • Lime zest
  • Chopped macadamias
  • White chocolate drizzle

Instructions

  • Add frozen pineapple, coconut milk, protein powder, yogurt if using, shredded coconut and vanilla to a high-speed blender or food processor.
    Blend until thick and creamy, scraping down the sides as needed.
    Add lime juice if using and blend briefly again.
    Serve immediately for soft-serve texture or freeze 1–2 hours for firmer scoops.
    Top with extra coconut or pineapple if desired.
    Notes
    Use full-fat coconut milk for best texture.
    Add frozen banana for extra sweetness and creaminess if desired.
    If mixture is too thick, add a splash more coconut milk.
    Best enjoyed fresh, but leftovers can be frozen and re-blended slightly before serving.
