Peppermint Protein Bliss Balls

Easy no bake, small but mighty snacks that are fudgy, soft, and so yummy. They are the perfect energy/protein bites before or after a workout or an afternoon pick me up. Packed with protein and healthy fats that will energize you and keep you full!

Ingredients

  • 1 cup walnuts or almonds
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/2 cup oats, instant or quick
  • 2 tablespoons cocoa powder
  • 1 scoop vanilla or chocolate protein powder
  • Few drops peppermint extract (taste test)

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1 candy cane or peppermint candies, crushed - optional

Instructions

  • In a food processor, process all bliss ball ingredients for several minutes until smooth and mixture has formed a ball inside the bowl of the processor.
    Form into 12 (or more smaller ones) balls and place on a plate. Put plate in the freezer while you complete the next steps.

Chocolate Coating

  • Place the chocolate chips and coconut oil to a small microwave-safe bowl and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.
    Take the balls out of the freezer and dip half the ball in melted chocolate (use 2 forks to hold them), then sprinkle with some crushed candy cane. They will set up on their own, but if you are in a hurry you can put them in the freezer or fridge.
    These keep fine at room temperature for up to 1 week, but to keep them firm and fresh, store in the fridge before and after serving.
