Ingredients
1cupwalnuts or almonds
1cupdates, soaked 30 minutes and drained
1/2cupdesiccated coconut
1/2cupoats, instant or quick
2tablespoonscocoa powder
1scoopvanilla or chocolate protein powder
Few drops peppermint extract (taste test)
Chocolate Coating
1/2cupchocolate chips
1teaspooncoconut oil
1candy cane or peppermint candies, crushed - optional
Instructions
In a food processor, process all bliss ball ingredients for several minutes until smooth and mixture has formed a ball inside the bowl of the processor. Form into 12 (or more smaller ones) balls and place on a plate. Put plate in the freezer while you complete the next steps.
Chocolate Coating
Place the chocolate chips and coconut oil to a small microwave-safe bowl and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and coconut oil together.Take the balls out of the freezer and dip half the ball in melted chocolate (use 2 forks to hold them), then sprinkle with some crushed candy cane. They will set up on their own, but if you are in a hurry you can put them in the freezer or fridge. These keep fine at room temperature for up to 1 week, but to keep them firm and fresh, store in the fridge before and after serving.
