Ingredients
1cupthick Greek-style yogurt, vanilla or plain
1/2cuppitted and chopped Medjool dates
1/2cupchopped peanuts, raw or roasted and salted
1/4cuppeanut butter
2scoopsprotein or collagen powder
Chocolate Coating
1cupchocolate chips
1tablespooncoconut oil
Flaky sea salf
Instructions
Add Greek yogurt, dates, peanuts, peanut butter and protein powder to a bowl.Stir until the ingredients are well combined.Use a spoon to scoop small dollops of around 1-2 tablespoons of the mixture onto a cookie sheet lined with parchment paper or use a silicon baking mat. You will get around 8-10 clusters depending on your preferred size.Place them into the freezer for one hour to harden.When freezer time is almost up, melt the chocolate chips with the coconut oil.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, coat each cluster in chocolate using 2 forks to turn them over in the chocolate and fully coat. Sprinkle with flaky sea salt, if desired.Place the clusters back into the freezer for about one hour more so the chocolate can harden before serving. Store in freezer for up to 3 months.
