Peanut Butter Yogurt Protein Bites

Ingredients

  • 1 cup thick Greek-style yogurt (plain or vanilla)
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1 scoop protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

  • Extra chocolate chips

Instructions

  • Line a baking sheet with parchment paper. This step ensures easy removal of the frozen bites and simplifies cleanup.
    In a medium mixing bowl, combine the yogurt, peanut butter, protein powder honey and vanilla extract. Stir until the mixture is smooth and well combined. The peanut butter should be creamy; if it’s too thick, microwave it briefly to soften.
    Fold in the chocolate chips until they are evenly distributed throughout the mixture.
    Using a tablespoon or cookie scoop, drop 10-12 (more or less depending on your size preference) rounded portions of the mixture onto the prepared baking sheet, spacing them about an inch apart.
    Sprinkle with extra chocolate chips if desired before freezing so they stick when you are eating them.
    Place the baking sheet in the freezer for about 1–2 hours, or until the bites are solid.
    Once frozen, transfer the bites to an airtight container and store them in the freezer until ready to serve.
    Optional Garnish:
    Once frozen, drizzle with melted dark chocolate or sprinkle with a few more mini chocolate chips if desired. Return to freezer for a few minutes to set.
    Store and Enjoy:
    Transfer frozen bites to an airtight container or freezer bag. Store in the freezer and enjoy straight from the freezer for a creamy, chewy, protein-packed treat!
