Ingredients
1cupcoconut or almond flour
1/2cupoats, instant or quick
1/2cuppeanut butter
2scoopsvanilla protein powder
2tablespoonshoney or maple syrup
1/2teaspoonvanilla extract
Chocolate Coating
1/2cupchocolate chips
1teaspooncoconut oil
Topping
sprinkle sea salt
crushed peanuts, optional
Instructions
Place the flour, oats, peanut butter, protein powder, vanilla, and honey in a bowl and mix everything together.Using a scoop or a spoon, divide the dough into 10 equal portions and roll it out into balls and place them on a lined baking sheet.Use the back of a fork to press down in criss-cross pattern and put them into the refrigerator to chill for 20 to 25 minutes while you melt the chocolate chips.Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Then dip each of these cookies into melted chocolate. You can dip half, or full or drizzle over the cookies.Sprinkle with salt and add optional crushed peanuts on top for crunchy texture.Then chill cookies for 20 minutes until the chocolate sets and serve.Store refrigerated for up to 5 days.You can also store them in the freezer. Just keep them in a resealable freezer-safe bag. They will stay fresh in the freezer for up to 6 months.
