Ingredients

Bar Base

  • 1 cup natural peanut butter
  • 1/2 cup vanilla protein powder
  • 1/3 cup honey or maple syrup
  • 1/4 cup almond flour or oat flour
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Jelly Layer

  • 1 1/2 cups frozen berries (strawberries, raspberries, or mixed berries)
  • 2 tablespoons chia seeds
  • 2 tablespoons honey or maple syrup

Optional Topping

  • 1/4 cup melted dark chocolate or melted peanut butter for drizzling

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a bowl, mix peanut butter, protein powder, honey, flour, vanilla and sea salt until a thick, smooth dough forms.
    Press the mixture into the prepared pan to create an even base.

Jelly Layer

  • To make the jelly layer, add frozen berries to a small saucepan and heat gently until softened and juicy.
    Mash the berries with a fork, stir in chia seeds, and sweeten if needed. Let sit for 5–10 minutes to thicken.
    Spread the jelly evenly over the peanut butter base.
    Drizzle with melted chocolate or peanut butter if using.
    Freeze for 2–3 hours, or until firm.
    Slice into 10-12 bars or more smaller squares and store in the freezer.
    Store bars in an airtight container in the freezer for up to 2 months. Allow to thaw slightly before eating for the best texture.
