Ingredients
Bar Base
1cupnatural peanut butter
1/2cupvanilla protein powder
1/3cuphoney or maple syrup
1/4cupalmond flour or oat flour
1teaspoonvanilla extract
Pinch sea salt
Jelly Layer
1 1/2cupsfrozen berries (strawberries, raspberries, or mixed berries)
2tablespoonschia seeds
2tablespoonshoney or maple syrup
Optional Topping
1/4cupmelted dark chocolate or melted peanut butter for drizzling
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a bowl, mix peanut butter, protein powder, honey, flour, vanilla and sea salt until a thick, smooth dough forms.Press the mixture into the prepared pan to create an even base.
Jelly Layer
To make the jelly layer, add frozen berries to a small saucepan and heat gently until softened and juicy.Mash the berries with a fork, stir in chia seeds, and sweeten if needed. Let sit for 5β10 minutes to thicken.Spread the jelly evenly over the peanut butter base.Drizzle with melted chocolate or peanut butter if using.Freeze for 2β3 hours, or until firm.Slice into 10-12 bars or more smaller squares and store in the freezer.Store bars in an airtight container in the freezer for up to 2 months. Allow to thaw slightly before eating for the best texture.
