Peanut Butter Ice Cream Protein Bars

Ingredients

Creamy Filling

  • 1 cup thick Greek-style yogurt
  • 1/2 cup natural peanut butter
  • 1 scoop chocolate or vanilla protein powder
  • 2 tablespoons maple syrup or honey
  • 2 tablespoons coconut flour or powdered peanut butter
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping

  • 3/4 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • In a bowl, mix Greek yogurt, peanut butter, protein powder, maple syrup, coconut flour and vanilla until smooth and thick.
    Spoon the mixture into 5-6 ice cream bar or popsicle molds and smooth the tops evenly.
    Place wooden popsicle sticks into the center of each mold.
    Freeze for 1–2 hours until firm.

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once the chocolate is melted,  remove frozen bars from the molds and drizzle over the bars. Or you can dip half of them or even the entire bar.
    Freeze again until fully set.
    Notes:
    Let bars sit at room temperature for 3–5 minutes before eating for best texture.
    Use chocolate protein powder for extra chocolate flavour.
    Store in freezer up to 2 months.
    Add crushed peanuts or chocolate chips for texture variation.
