Peanut Butter Crunch Bars

Satisfy your sweet tooth with these no-bake, healthy crunch bars!
A little melting, stirring and chilling and you have got a chocolatey treat to enjoy as an any time snack.

Ingredients

Slice Base

  • 1 cup oat flour (oats blended to a flour)
  • 1 cup roasted peanuts, roughly chopped
  • 1/2 cup almond or coconut flour (or more oat flour)
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 cup crushed nuts or seeds

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some over hanging to act as a handle to get the bars out easier for cutting.
    Combine all slice base ingredients in a bowl and mix until well combined.
    If dough seems a bit dry, add a little water or milk a tablespoon at a time and stir until it comes together.
    Scoop out into the lined baking dish and spread out evenly with a spatula or back of a spoon.
    Place in fridge or freezer while you melt the chocolate topping.
     

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, spread over the slice base and sprinkle with crushed nuts.
    Refrigerate for 1 hour, then cut into 10-12 bars or more smaller squares and serve.
    Store up to 1 week in fridge or up to 3 months in freezer.
