Ingredients
Slice Base
1cupoat flour (oats blended to a flour)
1cuproasted peanuts, roughly chopped
1/2cupalmond or coconut flour (or more oat flour)
1/2cuppeanut butter
1/4cuphoney or maple syrup
2tablespoonscocoa powder
2tablespoonscoconut oil, melted
1teaspoonvanilla extract
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
1/2cupcrushed nuts or seeds
Instructions
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some over hanging to act as a handle to get the bars out easier for cutting.Combine all slice base ingredients in a bowl and mix until well combined.If dough seems a bit dry, add a little water or milk a tablespoon at a time and stir until it comes together.Scoop out into the lined baking dish and spread out evenly with a spatula or back of a spoon. Place in fridge or freezer while you melt the chocolate topping.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, spread over the slice base and sprinkle with crushed nuts.Refrigerate for 1 hour, then cut into 10-12 bars or more smaller squares and serve.Store up to 1 week in fridge or up to 3 months in freezer.
